Chengdu Sichuan Travel: Bo Bo Ji Chicken Kebobs

This is a misnomer as Bo Bo Jin is essentially veggie as well as meat skewers dipped in a cold "hot pot". The sauce is a spicy sesame oil broth over water or chicken stock soup (cold or iced). Recent addition of chopped spicy chili pepper gives it an extra spicy punch much like jalapeƱos. This is an addition to the already spicy red hot chili oil. Cauliflowers  and broccoli are served on skewer in small chunks while meat is served spicy, marinated or "white" if it is stomach ... potato is thin sliced and rolled up before put on a skewer for impeccable texture
